Rack of Lamb
Adam’s Coffee Rub
Pre-heat oven to 375º F.
Sprinkle Adam’s Coffee Rub over entire surface of the lamb. Gently rub spices into rack.
Allow lamb to reach room temperature before putting into skillet or on a roasting pan bone side down.
Poke potatoes with a fork and cut into halves or quarters to allow for faster cooking time. Lightly salt the potatoes and place around rack.
Roast approximately 30 minutes at 375ºF or to desired doneness: 145º for medium-rare, 160ºF for medium. The internal temperature will rise up to 10º so consider desired temperature before removing from oven.
Cover and let stand for 10 minutes before serving.
