This is a simple yet great way to add a whole new complexity to the boring old bean.
Green Beans, trimmed
Whole/ground Nutmeg to taste (1 tsp - 1 Tbs)
1 Tbs Butter
Boil beans in salted water for 2-3 minutes or until just tender. I like to feel a little resistance when trying to break the been between my fingers.
Drain water and melt butter into beans while stirring. Once the butter has melted, use a grater to finely grate the whole nutmeg over the beans to taste.
Toss to combine and serve.
I prefer to grate a Nutmeg seed rather than using ground Nutmeg. Spices tend to lose a lot of their flavor when ground fine as this releases the oil in the spice that contains the unique inherent flavors. So when and if you can, stick to spices in their natural form. It adds a little prep time but it's worth it's weight in flavor. This is why I try and use the heaviest grain appropriate in my rubs.
