I love this dairy free potato salad. It's light, clean and fresh. The mayonnaise is replaced with a simple mix of olive oil, lemon juice and fresh mint. It is one of my go to sides for BBQ.
4 medium white potatoes
1 teaspoon salt
2 tablespoons fresh chopped mint
1⁄2 large purple onion, sliced
1⁄4 cup olive oil
1⁄4 cup lemon juice
Boil potatoes until done. A good test is when the potato slides of the end of a knife easily
Slice when cool.
Add all the ingredients together.
Refrigerate and toss before serving.
